Being 6'5" and finding my 2nd Gen a little cramped, I did the following:
Bought a Dune Buggy Seat ($75) and found some angle iron (bedframe). I created a metal shape like a T with two tails:

Side:
V----V---Holes drilled to mount to seat
---|----------------------------

^-^-^------Adjustment holes
I then created another piece with holes drilled so that it would use the existing front holes to mount to, with two vertical bars that matched with the Adjustment holes above.

|___|| <---CROSS bar wide enough to bolt to the floor.

^^ Bolt to floor
(Use bolts or quick disconnects to attach the top to the bottom.)
This nailed down the front of the seat. The back of the seat had three oval holes in the back (for stability I'd guess, it's a lot of thin plastic). I created two loops out of climbing strap that could be bolted to the rear bolt holes on the car (grommeted so they wouldn't rip) with D-rings. I then used two more straps and buckles, so that they made a loop through two of the holes in the chair and the D-rings. This nailed down the back.
I now have the only car I've truely fit in. It's cold in the winter and hot in the summer, but I don't much care...it was a $95 project.
